Here is a question I recently received from FOODPICKER.org

I have a very big issue when it comes to having diabetes and that is I do not eat vegetables.  I have tried.  I want control my diabetes and be around to raise my young children.  What suggestions do you have to add vegetables to my diet?

Answer:  Vegetables can be a great addition to a healthy diet.  With some experimenting you’ll probably find that there are some vegetables that you can tolerate and maybe even like.  Eating vegetables does not just have to mean eating raw celery and carrot sticks.  There are many ways to incorporate vegetables in your diet.  Consider these tips:

  • experiment with ways to incorporate vegetables into dishes.  Try adding vegetables to stir-fry, kabobs to grill, soups, or casserole recipes.
  • Saute vegetables with fresh herbs as a side dish.
  • Visit your local farmers market to get new ideas of how to prepare vegetables.
  • Shop for vegetables in season.  This way you will get the freshest vegetables available usually at a lower price.
  • Continue trying new vegetables… you are bound to find a few you like.
